When the fight came out, everyone called it an outlier for the ever lovin' blue-eyed Thing. Take for example 616 Thing vs Immortal Hulk. Sure, latest takes precedence, but that doesn't mean throw out decades of history just for one showing. I'd be willing to bet everyone we've talked about (physically and skillwise - gear is the difference) has been at their canonical same since like the turn of the century, if not before that. Someone like Cap hasn't really undergone a change - as far as I'm aware - for a while now.
